As you know, I've been working my tail off getting the new equipment up and going and the production space ready for the first inspection from the state Health Department.

Friday was the day. I'd spent the better part of the week before primping and cleaning and making it all ready for the inspection but it was mostly a thing of organization, after all I want the chocolate you receive to be the best ever.

They came by and looked around. They were very interested in the process, after all I don't think chocolate from scratch is something they see every day!!

We had discussed what was necessary when they first came by and started talking, so I had a pretty good idea of what to expect and I was prepared.

I did face one problem. At my day job I had some major melt downs and didn't get to leave for lunch until 1:30. After I left the office  I realized the inspection was at 2:00. So a REALLY fast lunch.

I had forgotten the written recall plan at the office but they were willing to let me e-mail that. They also asked for a process flow chart. I got back to the office and played with my graphics skills and got that out before 5:00.

Now we wait for a certificate and the new facility will be ready to go.
